I was really nervous about this week’s menu. I cook a chicken in a crockpot and then save some of the chicken and the bones to make broth. Everything ended up working out. I tried to make this list even cheaper but it ended up being really close to $60. If you already have sesame seed oil and soy sauce, that will save you some money. If you don’t like shrimp, buy two things of sausage. That will also save you some money. I also want to add that I know the word budget is relative. I picked $60 because I wanted to have variety in our meals but still keep it low. I also know that people have different dietary standards. Costs aren’t the same around the country. I mostly shop at Aldi and I live in Texas. We don’t have a state tax here either.

Menu:
Asian Lettuce Wraps and Egg Drop Soup
Taco Salad– with this recipe you will share cheddar cheese, cilantro, sour cream, and green onions with another recipe
Whole Roasted Chicken with sauted squash and scalloped cauliflower
Crockpot Low Carb Mexican Chicken Soup
Cajun Sausage and Shrimp Skillet

    Do ou prep ahead and freeze an of your meals? Wondering which ones might be most conducive to that.

      Hi Erin. I generally just put these in the fridge and eat throughout the week. I haven’t had anything go bad yet, however if you are worried about keeping them in the fridge that long, freeze the one(s) that have the least amount of dairy. I used to be big into OAMC. Having 5 kids at home and homeschooling, I didn’t always have time to cook meals. This is a little bit similar but I just do one week at a time and try to be finished in an hour.
