Cheesy Taco Bake, Low Carb THM S

This is my new favorite family friendly recipe! It isn’t a secret that I love Mexican food. I really could eat Mexican food everyday, well probably most of it is TexMex. This probably comes in the latter category, but it is delicious.

If you are following the Trim Healthy Mama plan, this is an S. If you are following a low carb eating plan, this would be a great addition. My cauliflower hating kid didn’t even know that I hid his least favorite vegetable in this dish. It is such a great low carb addition to casseroles like this. You can make your own cauli rice or buy it premade and frozen. That’s what I do. I love the convenience and price.


This dish is creamy and cheesy and delicious. This one of my recipes from meal prepping. You can prep this ahead and store in your fridge until you are ready to eat it. Serve with a side salad, some avocado or guacamole. Top it with salsa if desired. I think this is going to be a regular meal in my meal rotation. I hope you and your family like it as well.

Cheesy Taco Bake, Low Carb THM S

Ingredients

  • 1 Lb Ground Beef
  • 1 Medium Onion diced
  • 2 t Minced Garlic
  • 12 oz Package of Frozen Cauli Rice heated up in microwave
  • 1 Can Diced Tomatoes with Green chilies
  • 1 T Chili Powder
  • 1 t Ground Cumin
  • 1 t Salt
  • 1/2 t Pepper
  • 1/2 t Onion Powder
  • 1/2 t Garlic Powder
  • 1 8 oz Brick 1/3 Less Fat Cheese softened (you can use regular if you want)
  • 8 oz Cheese shredded Cheddar, Monterrey Jack, Pepper Jack Your Pick

Instructions

  • If you are eating it the day you make it, you won’t need another dish to put it in. If you making this as part of meal prep, make everything up to sprinkling it on cheese.
  • Get out a large skillet, put on stove top over medium heat. Add hamburger meat and start browning the meat. Add the onion and garlic. Continue to stir and brown the meat. Add the cauli rice, canned tomatoes and seasonings. The longer you can cook your meat mix with the cauli rice and seasonings, the more the rice takes on those flavors. I suggest about 15 minutes. You can add some water is your skillet gets too dry.
  • Once the cauli rice is cooked through and the liquid is gone, add the cream cheese. Stir until the cream cheese is melted and mixed in. Add 1/2 C Shredded cheese and stir. Top with desired toppings. Serve hot.
  • If this is part of meal prep, add the contents of the skillet into the 9X13 baking dish. Cover and store in fridge.
  • The day you want to bake this, remove from fridge and heat the oven 350 degrees. Bake for 20 minutes. Remove from oven and top with the rest of the cheese and desired toppings and put back in the oven until hot and bubbly.
  • Serve with desired sides and serve hot.

    My daughter loved it and asked for the leftovers the next day. I had to tell her that her brother ate all the leftovers the night before. It was a huge hit and will become a family regular. I could easily see my college son making it with rice at his apartment as well.
