Creamy Low Carb Bacon Mushroom Casserole

This is one of those recipes that was born out of desperation. I had a crazy busy day and had nothing planned for dinner. I had one of my sons grab a package of hamburger meat from the freezer. I had cream cheese, bag of frozen riced cauliflower, sliced mushrooms, cheddar cheese, green onions, and a package of bacon bits. I pretty much threw all of this together and came up with this casserole. My hubby did say that it could use more of the creamy stuff, so you might want to add an extra 1/2 package of cream cheese. I thought it was just right and the kids didn’t complain.

This can be a complete meal as is. If you want to or need to add more, add a salad or something like that. Maybe a roasted vegetable or roasted vegetable medley. That would be a perfect addition to stretch this meal. I actually loved this and plan on making this again. It is one of those trim healthy mama s meals that uses the basics that many of us have in our kitchens. If you try it, like it or hate it, let me know. I do appreciate feedback.

Creamy Low Carb Mushroom and Bacon Casserole

Ingredients

  • 1 Lb Hamburger Meat
  • 1 Med Onion, diced
  • 2 t Minced Garlic
  • 8 oz Sliced Mushrooms
  • 12 oz Frozen Rice Cauliflower
  • 8 oz Cream Cheese
  • 2-7 T Chicken Broth The amount depends on how long you cook your meat mixture and the moisture of you meat and veggie mix
  • 1 C Shredded Cheddar Cheese
  • 1 t Salt
  • 1/2 t Black Pepper
  • 2 t Smoked Paprika
  • 1/2 t Garlic Powder
  • 1/2 t Onion Powder
  • 2 t Minced Garlic
  • 5 Green Onions, chopped

Instructions

  • Brown the ground beef over medium heat.
  • Add your diced onion and minced garlic to the beef.
  • Brown and cook for a few minutes. Add the diced mushrooms and the riced cauliflower that was cooked in your microwave for the suggested time.
  • Brown for a few minutes and add your seasoning. Stir and cook for a few minutes.
  • Add the block of cream cheese.
  • Stir and cook the mixture. Add the needed amount of chicken broth to the mixture to keep it from getting too dry. Add mixture to a greased 9X13 pan.
  • Top with the shredded cheese, real bacon bits, and green onions.
  • Bake at 350 degrees for 15 minutes.
  • Serve hot.

  • My husband says this is the best cauli rice recipe we have tried so far. I have to agree. My only complaint is no where in the ingredients are the bacon bits. When I looked it over to see if I had everything I was happy I did. Then came the add bacon bits. Oops luckily I had bacon in the fridge I quickly cooked and crumbled. Thanks for another great meal.
