Low Carb, Crockpot Chicken Broccoli Alfredo

This low carb, trim healthy mama s, crockpot chicken and broccoli alfredo is so easy and yummy, it’s perfect for any day of the week.

I have discovered through my time blogging that easy is something I am constantly using to describe my recipes. I think it’s because most of us moms don’t want to spend all day in the kitchen cooking. This crockpot chicken broccoli alfredo is exactly that. You only need a few ingredients and a crockpot and you have a perfect dinner. Make this during sports or dance season, summer when you are out all day, Saturday shopping days, or even days where you just want to take it easy!!

That’s what I did. Not only was this easy, my son was able to dump everything in the crockpot for me while I was gone. I try to have a crockpot meal every Monday since that’s the day I go with my hubby (he’s a truck driver). Usually I prep it right in the crockpot base but I didn’t this time. This chicken and broccoli alfredo doesn’t use prepared alfredo sauce either, just a few ingredients from your fridge and you will have a yummy sauce. I also tried to lighten it up some. You can use more heavy cream if you want to. I am not scared of fats, I just don’t want to overdo them all of the time.

This recipe was literally created from items in my kitchen.

I didn’t have fresh broccoli so I used a bag of frozen. I used chicken breasts from the bags of IQF bags. Almond milk and heavy cream create the sauce. I did use xanthan gum as a thickener. This is optional but you should be able to find this item at your local grocery stores. You can use gluccomannan in place of the xanthan gum but that thickener isn’t my favorite. When I did my meal prep, I put the chicken breasts in a baggie, frozen, I placed the frozen broccoli in the container frozen as well. The sauce ingredients were placed in a Rubbermaid container. And the parmesan cheese in a small baggie. So easy!! Here’s the recipe.

Low Carb Crockpot Chicken Broccoli Alfredo

Ingredients

  • 2 Lb Chicken Breasts
  • 1 C Heavy Cream
  • 1 C Unsweetened Almond Milk
  • 1/2 C Chicken Broth
  • 12-16 oz Frozen Broccoli- depending on the size of the frozen bags in your store, 12 oz or 16 oz either one is fine
  • 2 T Minced Garlic
  • 1 t Onion Powder
  • 1 t Italian Seasoning
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1/2 C Parmesan Cheese, plus more for topping
  • Xanthan Gum, optional
  • Dried Parsley and Red Pepper flakes for topping, optional

Instructions

  • Place chicken and broccoli in your crockpot. Mix together heavy cream, almond milk, chicken broth, garlic, onion powder, Italian seasoning, salt and pepper. Pour on top of the chicken and broccoli. Top with parmesan cheese.
  • Cook on low 4-5 hours or high for 2-3 hours. When finished, remove chicken and dice.
  • If using xanthan gum, remove the medium to big broccoli pieces. Cut them into bite size pieces. Add 1/4 tsp of xanthan gum at a time. I used 1/2 tsp total. Make sure you whisk for a few minutes before adding more.
  • When thickened, add the broccoli and chicken back to the crockpot and stir. Taste it and see if it needs more salt or flavor.
  • Serve over pasta of choice.

    Hi, I am new to THM . What fuel is this meal? If you use Heavy Cream would that make it an S?

      Yes, it is an s. You can have up to 1 tsp per serving of fat in an e or fp meal. If you have more questions, feel free to ask.

      I package of frozen broccoli, I believe they are 16 oz.
