This recipes is so easy, If you are looking for a new low carb, or trim healthy mama s recipe this summer, give this one a try. It is delicious!! This was a hit with everyone in my house. I was a little worried since at least one of my kids isn’t a huge salad eater. I even told him he could make his plate without the greens and find something else to serve it with but he ate it just like this. I didn’t have any leftovers. I was bummed because I was looking forward to having this for my lunch today. Honestly, I do love having leftovers but I would rather my family eat it all because they loved it so much.

I know what it’s like to have a tight food budget. Honestly, that has been the majority of my life. You just learn to get creative. I have local grocery store that has meat on sale almost every week. They have a pick four for $19.99. They also usually have buy one get one free. That is how I bought the sirloin steak for this recipe. I try to get as close to the same weight as possible and that way I am getting a good value. You can use chicken in place of the steak if that is better for your budget. This recipe really should be made with kalamata olives but the regular black ones are cheaper. Buy whatever tomatoes are on sale and cut as desired.

This recipe was so incredibly easy to make. I had a very busy day the day I made this. I spent over 4 hours in my car doing errands and transporting kids. I through the marinade in the baggie during one of my moments at home before running out the door again. The veggies can be pre-chopped early in the day or even during your meal prep. This is perfect for busy days, lazy days, or even camping trips.

If you need a new grill recipe in your life, it’s hot where you are, or you just want to vamp up your menu, I highly suggest you add this to your menu.

This recipe is easily adapted to you and your family’s needs. You could definitely add pepperoncini peppers to this, use kalamata olives, etc. We loved this recipe so much. I think I will prep and make this on our 4th of July camping trip.

Grilled Sirloin Greek Bowls

Servings 5

Ingredients

  • 1.5 Lb Top Round Sirloin Steak
  • 1/2 C Olive Oil
  • 1/3 C Balsamic or Red Wine Vinegar
  • 1 Lemon, Juiced
  • 1 t Salt
  • 1 t Pepper
  • 2 t Dried Oregano
  • 1 T Minced Garlic
  • 4-6 C Chopped Romaine
  • 1 C Grape Tomatoes, sliced in half
  • 1 C Diced or slivered Cucumbers
  • 1 C Black olives, sliced in half
  • 1 Sm Red Onion, cut into slivers I used yellow, my red was bad
  • Feta Cheese, desired amount for each salad
  • 1/2 C Olive Oil
  • 1/4 C Lemon Juice
  • 2 t Minced Garlic
  • 3/4 t Salt
  • 1/2 t Black Pepper
  • 1 t Dried Oregano
  • 1/4 C Non-fat Greek Yogurt, optional

Instructions

  • Take the marinade ingredients and add them to a gallon ziplock baggie. The top list of the ingredients, olive oil through the garlic (right before the romaine). Squish around a little.
  • Add the steak to the baggie. Squish around and place in fridge.
  • When ready to grill the meat, get the baggie out of the fridge. Allow it to rest on the counter.
  • While the steak is resting, make the dressing. In the ingredient list, it's the second olive oil and all of the ingredients below it. Add those ingredients in a small bowl.
  • Whisk together.
  • You can start to assemble the salads now if you want.
  • Drizzle with the dressing. You might need to whisk again.
  • Grill your steak to desired doneness. I cooked on medium high for about 4 minutes per side.
  • Allow steak to rest for a few minutes before slicing.
  • Slice and place on top of salad.
