Low Carb Sausage Balls

I get tired of eggs and yogurt, my typical go-tos for breakfast. I like to have things that I can make ahead of time and eat throughout the week. I also need portable as well. Since my hubby is a truck driver, things that he can take and eat while he is driving. These were perfect!!

These are so easy, your kids can make them. You can have everything measured out for them. You dump everything in a bowl, mix, and shape. Nothing complicated with this recipe. You can also freeze these. I mentioned before that I used to be big in the once a month cooking scene. These low carb sausage balls are a remake of ones I used to freeze. These would be perfect to make a double batch and freeze the extras. The hot sauce is optional and you can add more if you like it hotter. Make these for your family and I am sure they will be a hit.

Low Carb Sausage Balls

Ingredients

  • 16 oz Breakfast Sausage
  • 4 oz Cream Cheese, softened
  • 1/2 C Almond Flour
  • 1 C Shredded Cheese
  • 1 t Baking Powder
  • 1/4 C Parmesan Cheese
  • 1 Med Egg
  • 1 t Minced Garlic, opt
  • A Few Shakes Hot Sauce, opt

Instructions

  • Dump all of the ingredients in a bowl.
  • Mix all of the ingredients together.
  • Form into balls. I used a cookie scoop. If you don't have one, use about 1 tablespoon per ball.
  • Place sausage balls on a parchment lined baking sheet. Bake at 375 degrees for 20-25 minutes.
  • I put them back in the oven and baked them for 5 more minutes.

    I have also since made these using Italian sausage and Italian cheeses. Delicious!

    What is the serving size? I realize the balls will be different sizes, but about how much is a serving per pack of sausage?

      I generally have 3 or 4 and some strawberries on the side.

    Made these at dinner time for breakfast the following morning. My husband tried to eat these instead of the dinner I made. We loved them. My husband said they reminded him of the sausage balls his sister used to make with bisquick. I had 5 for breakfast the next day. When lunch time came around, I still wasn’t hungry.
