Trim Healthy Mama Breakfast Sandwich

We recently went camping. This sandwich is a staple breakfast at some point during our camping trips. We try to camp a few times a year and I often use the same menu with a few tweaks here and there. Depending on your bread of choice, this is either a trim healthy mama s or crossover.

I don’t really think this “recipe” requires a post but since I am making a trim healthy mama camping post, I thought I would go ahead and give this meal idea its’ own page. You can use whatever cheese you want and meat. If you have a family member that doesn’t like mayo, substitute whatever they want.

THM Breakfast Sandwiches

Ingredients

  • 1 Cooked Egg Per Person, we fried ours and seasoned with salt and pepper
  • 2-3 Slices Ham or other sandwich meat
  • 1 Slice Cheese of choice per sandwich
  • 1 t Mayo Per Sandwich
  • 2 Slices Bread for each Sandwich
  • Foil to wrap each sandwich

Instructions

  • Toast your bread in a skillet.
  • Spread mayo on each slice of bread.
  • Place your fried egg, ham and cheese on your bread.
  • Close your sandwich and wrap in foil. Cook in your skillet until the cheese melts or until as hot as you want it to be. I used medium heat and kept flipping so they wouldn't burn.
  • Eat hot.

Hi Jennifer – help me out here, what bread would I use to keep it an S? I am not in maintenance & just got back fully on plan, well ok, 90% anyway 🙂 and don’t want to do XO’s right now. Unless they are ok on occasion, then what bread would I use?

If you aren’t wanting a xo, can you make one of the fp options from the book> I haven’t made the bread that has the initials that are close to mwwbb but I have made nuke queen’s bread before. That bread turned out really well. Another option might be to get on on plan tortilla and make it into a modified quesadilla breakfast sandwich.
