Trim healthy mama e blueberry baked oatmeal easy, healthy, and yummy.

Baked oatmeal was the only oatmeal I could get my kids to happily eat when they were young. It was full of sugar and butter. It was sort of defeating the purpose of the health benefits of the oatmeal. I have definitely come a long way. This yummy trim healthy mama e baked oatmeal is so yummy I would be willing to serve it to a group of people who eat a regular SAD (standard American Diet) way of earing. I am very happy with how this recipe turned out.

I used frozen blueberries but you can use fresh.

I found at my local Costco a large bag of organic wild blueberries. I have been using these blueberries in my smoothies, oatmeal, and porridge. They are great little berries. If you have fresh or the regular sized frozen ones, this will still turn out fine. This recipe uses 2 very ripe bananas You can sub a cup of applesauce in place of the bananas, but I think they give a nice sweetness and hint of flavor. If you don’t like blueberries, I think most any type of berry could be used, but if they are large I would cut them up into smaller pieces.

You could easily make these into “muffins”.

If you wanted to make these a bit more transportable, bake these in muffin pans. These would be great to make during meal prep, or a little down time, and eat throughout the week. I would also freeze them for easy on the go breakfasts. Take out the night before and put in your fridge. If you want them warm, heat them in the microwave for a few seconds. Perfect for busy mornings. This recipe is so easy and you should be able to get everything at your local Walmart. I used brown swerve for the sweetener in this recipe. If you don’t have any brown sugar substitute, you can use whatever you have. The brown sugar sub just adds a little extra flavor. Make this soon, it really is that good.

THM E Baked Blueberry Oatmeal

Ingredients

  • 4 C Rolled Oats (old fashioned)
  • 4 C Wild Frozen Blueberries
  • 1/2 t Salt
  • 1/2 C Brown Sugar Substitute
  • 1 t Baking Powder
  • 2 Ripe Bananas
  • 1 C Egg Whites
  • 1 1/2 C Unsweetened Almond Milk
  • 2 t Ground Cinnamon
  • 2 t Vanilla

Instructions

  • So I did this a little different than normal. Mash your bananas and then mix in the cinnamon.
  • Then add the egg whites and mix. Add the sugar sub and mix. Next add the vanilla and almond milk. Mix well.
  • To the oats add the salt and baking powder. Toss. Add the oats to the liquid.
  • In a 9×13 pan, sprayed with non-stick spray, layer about half of the oatmeal mixture
  • Sprinkle 2 cups of the blueberries over the oatmeal mix. We do this so you don't end up with green/gray baked oatmeal. Top with the rest of the oatmeal mixture and then the rest of the berries.
  • Your bake time will depend on if you used fresh or frozen berries. I baked at 350 degrees for 40 minutes. If you used fresh, I would start checking after 30 minutes.
  • Serve warm with a little light whipped cream, if desired. You can also serve in a bowl with a little almond milk.
