Place a medium sized skillet on your stove-top over medium heat.
Beat together in a medium to small bowl, egg whites, almond milk, stevia and vanilla.
Dip your bread into the egg mixture.
Spray your skillet, if needed, with non-stick cooking spray. Lay your bread in the skillet and cook for a few minutes. You want you bread to look like mine above. It is brown and kind of firm. Flip and cook on the other side. Remove to your plate when done.
Mix you Greek yogurt topping ingredients together. Place on top of you French toast. Add blueberries if desired and sugar-free pancake syrup.
Eat warm.
