Sprinkle the chicken thighs with the seasonings. In a large skillet add your olive oil and then your chicken. Cook over medium heat.
Flip over occasionally until cooked through.
When they are cooked, remove from the skillet.
Add your garlic and mushrooms.
Cook for a minute or two.
Add the diced tomatoes.
Cook for about 5 minutes, stirring occasionally.
Add the heavy cream and Parmesan cheese.
Stir those ingredients in thoroughly.
Add the baby spinach.
Mix together and cook for about 2 minutes.
Add the chicken back to the skillet and allow the chicken to get hot.
Serve warm.
