Low Carb Tuscan Chicken and Mushrooms

Ingredients

  • 2 Lb Boneless, Skinless Chicken Thighs
  • 1 T Olive Oil
  • 1 T Minced Garlic
  • 8 oz Package Sliced Baby Bella Mushrooms
  • 14.5 oz Petite Diced Tomatoes I used a store brand with basil, garlic, and oregano
  • 1/2 C Heavy Cream
  • 1/3 C Parmesan Cheese I used the store brand green can
  • 3 C Baby Spinach

Seasonings: Salt, Pepper, Garlic Powder, Onion Powder, Italian Seasoning

    Instructions

    • Sprinkle the chicken thighs with the seasonings. In a large skillet add your olive oil and then your chicken. Cook over medium heat.
    • Flip over occasionally until cooked through.
    • When they are cooked, remove from the skillet.
    • Add your garlic and mushrooms.
    • Cook for a minute or two.
    • Add the diced tomatoes.
    • Cook for about 5 minutes, stirring occasionally.
    • Add the heavy cream and Parmesan cheese.
    • Stir those ingredients in thoroughly.
    • Add the baby spinach.
    • Mix together and cook for about 2 minutes.
    • Add the chicken back to the skillet and allow the chicken to get hot.
    • Serve warm.
