In a large skillet over medium heat, add your onion. Sauté for a few minutes.
Add minced garlic and cook for about 1 minute.
Add mini bell peppers to the skillet and cook for another minute.
Add sausage and cook for about 2-3 minutes.
Add veggies and cook for approximately 5 minutes.
When veggies are cooked to your preference taste and add salt and pepper to taste.
Add to bowls and top with parmesan cheese and any spicy seasonings you like.
