Low Carb Baked Feta Pasta

Ingredients

  • 2 Pints Cherry Tomatoes
  • 1/2 C Olive Oil
  • 1/2 t Salt
  • 1/4 t Black Pepper
  • 1 T Minced Garlic
  • 8 oz Chunk Feta Pasta
  • 6 oz Pasta of choice

Instructions

  • In a 2-3 quart casserole dish add tomatoes and all of the seasonings and olive oil.
  • Toss to coat.
  • Place block of cheese in the middle. Bake in a 350 degree preheated oven for 40 minutes. After the 40 minutes, turn up to 425 and cook for 15 more minutes. Start boiling your water (if using pasta) around the 10 minutes left of the first cooking time.
  • Start mashing the tomatoes and when they are just about mashed, start mashing the feta cheese. I used a potato masher.
  • When mashed and combined, add your hot pasta and stir. If desired top with a little parsley and dried oregano.
  • Serve hot. I served with Italian sautéed squash.
