Crockpot Green Chili Chicken

Ingredients

  • 2 Lb Boneless Skinless Chicken Breasts or Thighs
  • 2 4.5 oz Cans of Green Chilis
  • 1 T Minced Garlic
  • 1 t Salt
  • 1/2 t Pepper
  • 1/2 t Ground Cumin
  • 1 t Chili Powder
  • 8 oz Cream Cheese, can use 1/3 less fat
  • 1 1/2 C Shredded Cheese, cheddar or cheddar Jack

Instructions

  • Place the chicken in the crockpot. Mix together the green chilies, garlic and seasoning. Pour on top of the chicken. Cook on low 4-6 hours or high 2-3 hours.
  • Place the cream cheese into the crockpot and allow to melt. Shred with two forks. Add the shredded cheese and stir.
  • Serve with your desired sides and toppings.
