If desired, brown your chicken in a large skillet in a little olive oil
Place chicken in the bottom of the crockpot. Top with roasted peppers, black olives and onion.
Mix together the red wine vinegar, minced garlic, oregano, salt, and pepper. Pour on top of the items in the crockpot. ,
Cook on low for 3-5 hours or high for 2-3 hours.
Serve warm with feta and parsley on top.
