In a large bowl mix oats, cinnamon, ginger, baking powder, and salt together.
Toss the cranberries with the sweetener in a small bowl.
Mix together the egg whites, almond milk, applesauce, sweeteners, and vanilla in a medium bowl. I used a whisk.
Mix the cranberries and chopped apple together.
Add the liquid to the dry ingredients. Stir. Add cranberries and apple mix, and stir until combined.
Pour into a greased 9x13 pan. Top with chopped nuts, if using, Bake at 350 degrees for 30 minutes. Check and see if it's done. You want it to not be jiggly.
