Oopsie Roll Sugar Free Low Carb Danishes

Ingredients

  • 6 Eggs Seperated
  • 6 T Cream Cheese softened
  • 2 Small Pinches Salt
  • 1/2 T Gentle Sweet double if using a different sweetener
  • 1/4 t Cream of Tartar
  • 1/2 t Vanilla Extract
  • 6 oz Cream Cheese Softened
  • 2 Eggs
  • 2 T Gentle Sweet double if using a different sweetener
  • 1 t Extract I used 1/2 t Vanilla and 1/2 t Almond Extract
  • 1/4 t Xanthan Gum
  • 6-12 T Sugar Free Jam

Instructions

  • Preheat oven to 300 degrees. Place parchment paper on two baking sheets.
  • 2.Place egg yolks, cream cheese, salt, and sweetener into the bowl of your mixer. Beat until no lumps are left. Pour into a bowl and thoroughly clean your mixer.
  • Add egg whites to cleaned mixer bowl. Add cream of tartar and beat until stiff peaks form. This will take a few minutes. I worked on something else in the kitchen while they were beating.
  • Add the egg yolk mixture to the mixture with the beaten egg whites. Carefully mix/fold the mixtures together. You dont want to over mix, just mix until combined.
  • Onto the prepared pans, scoop about 1/2 of a cup of the mixture onto the parchment paper. Make 12 equal sized rounds. Flatten slightly and bake for 10 minutes.
  • While the oopsie rolls are baking, lets start on the cream cheese filling. Add cream cheese, eggs, and sweetener to the mixing bowl. Beat until smooth and creamy. Add extracts and xanthan gum, both optional. Beat for about 1 minute or until thickened.
  • When the 10 minutes are up, take the pans from the oven. In the middle of each roll add 1/12th of the cream cheese mixture. I used a cookie scoop and then a spatula for the last one.
  • Place them back in the oven for 5 more minutes. When the time is up, take the pans back out of the oven. Carefully top each roll with 1/2-1 tablespoon sugar free jam. I left some with only cream cheese for my hubby and a few with not even 1/2 T of the jam, again for my husband. I used the whole 1 T for my danishes.
  • Place back in the oven for approximately 10 more minutes. I baked mine until they were beginning to brown on the edges.
  • Remove from the oven and let cool. Honesty here, I ate 2 hot out of the oven. I put the rest in the fridge to store.
