Low Carb Sausage and Shrimp Cajun Skillet


  • 1 12-16 oz Package of Sausage
  • 1 12 oz Package of Frozen Shrimp- Deveined Shelled, and Thawed
  • 1 Bunch of Asparagus woody ends removed, Cut into Thirds
  • 2-3 Yellow Squash Sliced
  • 1-2 Zucchini Sliced
  • 1 Can Fire Roasted Tomatoes
  • 1 Medium to Large Onion Diced
  • 1-2 t Minced Garlic
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1/4-2 t Cajun Seasoning
  • 1/2-1 T Olive Oil


  • Drizzle Olive oil into a large skillet over medium heat. Add diced onion and cook for about 5 minutes, until onion has softened. Add garlic and cook another 2 minutes.
  • Turn the heat up to medium high and add the veggies, the sausage and the canned tomatoes. Cook until veggies are soft. Add in seasonings and stir.
  • Add thawed shrimp to the skillet and cook just until the shrimp turns pink, about 2 to 4 minutes.
  • Serve in bowls with extra seasoning, as desired.
