Drizzle Olive oil into a large skillet over medium heat. Add diced onion and cook for about 5 minutes, until onion has softened. Add garlic and cook another 2 minutes.
Turn the heat up to medium high and add the veggies, the sausage and the canned tomatoes. Cook until veggies are soft. Add in seasonings and stir.
Add thawed shrimp to the skillet and cook just until the shrimp turns pink, about 2 to 4 minutes.
Serve in bowls with extra seasoning, as desired.
