Cajun Sausage and Shrimp Skillet

Ingredients

  • 14 oz Low Carb Sausage sliced
  • 1 lb Medium Shrimp raw, peeled and deveined
  • 1 Medium onion diced
  • 1/2 Bunch of Asparagus ends trimmed, cut into 2 inch pieces
  • 2 Medium Yellow Squash sliced
  • 2 Medium Zucchini sliced
  • Salt and pepper to taste
  • 2-3 T Olive Oil
  • 1-2 T Cajun Seasoning

Instructions

  • Saute onion in 1 tablespoon olive oil over medium heat.
  • Add sausage and veggies to skillet with onion. Add more oil as needed. Cook until veggies are soft and cooked through, about 8-10 minutes.
  • Add thawed shrimp to skillet. Cook until shrimp are opaque and pink, about 2-3 minutes. Add seasoning and serve hot.
