THM E Mexican Rice


  • 3 C Cooked Brown Rice
  • 1 lb Low Fat Hamburger Meat
  • 1 Med Red Onion, diced
  • 1 Med Bell Pepper, diced I used an orange one
  • 1 Tbl Minced Garlic
  • 2 Cans Diced Tomatoes with Green Chilies
  • 1 Can Black Beans, rinsed
  • 1 Can Pinto Beans, rinsed
  • 1 Diy Taco Seasoning
  • 4 oz Reduced fat Cream Cheese
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Toppings: Green Onions, Cilantro, Salsa, Jalapenos


    • Cook ground beef. Add onion, bell pepper, and garlic to skillet.
    • After the meat is browned and the veggies are cooked, add canned tomatoes and beans. Add seasoning.
    • Mix well and add the cream cheese. Stir until melted. Mix in the cooked brown rice.
    • If making ahead, store in fridge. If eating right away, serve in bowls and top with desired toppings.
