Plug in your instant pot and take the lid off. Press the saute button. When it is hot, about 2 minutes later, add your fat to the pot.
Sprinkle salt and pepper onto your roast.
Place your roast into the pot on top of the fat.
Sear for a few minutes and flip over.
Top the roast with all of the veggies.
Combine broth with the seasonings and garlic. Stir and pour over roast and veggies.
Close lid and make sure vent is closed. Press manual 45 minutes. Allow to naturally release for 5 minutes. Carefully remove the lid.
Serve warm in a bowl.
