Preheat oven to 400. If desired, line your sheet pan with parchment paper or aluminum foil.
Prep your meat and veggies.
Make your taco seasoning.
Drizzle your chicken with the desired amount of olive oil and toss.
Sprinkle the taco seasoning on top and toss.
Bake for 15 minutes
Take out of the oven and stir everything. Put back in the oven until finished, about 10 more minutes.
Take out of the oven and stir.
Serve in low carb tortillas, corn tortillas, lettuce leaves, etc.
