Low Carb Broccoli Salad

Ingredients

  • 2 Heads Broccoli, chopped into pieces
  • 2.5 oz Bag Real Bacon Pieces
  • 1/2 C Mayo
  • 2 T Apple Cider Vinegar
  • 1/2 C Non-fat Greek Yogurt
  • 3/4 C Shredded Cheddar Cheese
  • 3/4 C Diced Onion
  • 1/2 C Sunflower Seeds
  • 1-2 T Sweetener of Choice- I used 1 T Confectioners Swerve
  • 1/2-1 tsp Salt, this will depend on the saltiness of your bacon
  • 1/4 t Black Pepper
  • 2 T Unsweetened Nut Milk

Instructions

  • Put all ingredients except broccoli in a bowl.
  • Stir until combined.
  • Place chopped broccoli in a bowl.
  • Add the mayo mixture to the broccoli and stir.
  • Keep in the fridge until ready to serve.
