Low Carb Crockpot Pizza Casserole

Ingredients

  • 1 lb Hamburger Meat
  • 1 lb Italian Sausage I used homemade wild hog Italian sausage
  • 1 Med Onion, diced
  • 1 Med Bell Pepper, diced I used half of a red or orange
  • 2 t Minced Garlic
  • 1 t Salt
  • 1/2 t Black pepper
  • 1 1/2 t Italian Seasoning
  • 8 oz Mushrooms, minced or diced optional
  • Few Shakes Red Pepper Flakes optional
  • 14.5 oz Canned Tomatoes, drained
  • 14 oz Jar of Pizza Sauce
  • 2 C Shredded Pizza Cheese
  • 1 C Shredded Mozzarella
  • Pepperoni Slices
  • 2.25 oz Can of Sliced Black Olives optional

Instructions

  • Brown both meats in a large skillet over medium heat.
  • Add the onion and bell pepper. Cook to your family's preference.
  • Add all of the seasonings, mushrooms, minced garlic., and drained tomatoes. Stir well.
  • If part of meal prep and allow to cool down and pick up here when ready to finish. Add the 2 cups of shredded pizza cheese. Stir to combine.
  • Spray crockpot with non-stick spray. Add meat, veggie, and cheese mixture to the crockpot.
  • Pour pizza sauce on top and spread out.
  • Lay pepperoni slices on top. Cover with lid and cook for 3-4 hours on high or 5-7 hours on low.
  • About 15 minutes before the dinner is finished, sprinkle the one cup of shredded mozzarella and the sliced black olives on top. Replace lid and cook for about 15 more minutes.
  • Serve hot with a salad.
