Beat the heavy cream until thickened and holds a shape. This is what mine looks like.
Scrape out your whipped cream. Add your cream cheese and beat until soft.
Add the lemon juice, rind, pinch of salt and sweetener. Beat together. Add the whipped cream and mix together.
Taste and add lemon extract if you think it needs more lemon flavor.
Serve with a little whipped cream on top and a small sprinkle of grated lemon rind, if desired. Store in fridge.
