Low Carb Indian Spiced Cauliflower Rice

Ingredients

  • 10 oz Frozen Riced Cauliflower, heated through in the microwave
  • 1 Sm-Md Onion, diced
  • 1 T Minced Garlic
  • 1-2 T Olive Oil
  • 1/2 t Turmeric
  • 1/2 t Ground Cumin
  • 1/2 t Gram Marsala
  • 1/2 t Curry Powder
  • 1/2 t Salt
  • Few Shakes Cayenne Pepper
  • Enough water or broth to cook the rice until it's soft

Instructions

  • Add the olive oil and onion to a medium skillet over medium heat. Cook for a few minutes. Add the garlic and cook another minute.
  • Add the spices and cook for a minute or two.
  • Add the cauliflower rice and stir to combine. Add water or broth to the skillet and cook until the rice is soft. You can increase the heat but don't go very far so you can keep an eye on it so it doesn't burn. Taste and add more seasonings is desired.
  • If this is a side dish, add some chopped cilantro on top and serve hot.
