Crockpot Creamy Italian Chicken

Ingredients

  • 2 Lb Chicken Breasts
  • 1 T Minced Garlic
  • 1 T Tomato Paste
  • 14.5 oz Diced Tomatoes
  • 1/2 C Sundried Tomatoes
  • 1 t Salt
  • 1/2 t Black Pepper
  • Few Shakes Cayenne
  • 2 t Italian Seasoning
  • 4 oz 1/3 Less fat Cream Cheese
  • Parmesan Cheese to Sprinkle on top
  • Fresh or Dried Basil for topping
  • 1 1/2 C Frozen Okra

Instructions

  • In your crockpot mix together diced tomatoes, minced garlic, tomato paste, Italian seasoning, sundried tomatoes, tomato paste, salt, and pepper. Place your chicken breasts on top of the tomato mixture. Cook for 4-5 hours.
  • Remove chicken breasts to a plate or cutting board. In a blender place liquid from your crockpot, frozen okra, and sundried tomatoes.
  • Blend until smooth.
  • Add cream cheese and blend again.
  • Pour blender mixture back into the crockpot. Either cut or shred your chicken and place back in the crockpot. Stir. Taste. See if you need/want more liquid or more seasonings.
  • Serve warm over pasta of choice.
