Easiest and Delicious Low Carb Chocolate Chip Cooke

Ingredients

  • 1 C Almond Flour
  • 1/4 C Sugar free chocolate chips, I used Lily's
  • 1 T Sweetener
  • 1 T Brown Sugar Alternative
  • 3 T Browned Butter see notes in recipe
  • 1 t Vanilla
  • 1/8 t Baking Soda
  • 2 Pinches Salt
  • 1/4 t Xanthan Gum optional
  • 1 Med Egg, beat well

Instructions

  • In a small saucepan, over medium low heat, melt your butter. It will take a couple minutes and it goes from melted to burnt fairly quickly, so keep an eye on it.
  • While you are melting the butter, add all of the dry ingredients to a medium bowl.
  • Mix well, making sure you don't have any baking soda clumps.
  • Once your butter is brown, add the butter and vanilla to the dry ingredients.
  • Mix well and then add the beaten egg.
  • Add the chocolate chips.
  • In an oven preheated to 325, take about a tablespoon of the dough and form into balls. Place on a parchment paper lined cookie sheet. flatten a little. They don't seem to spread much during baking. Bake for 8 minutes.
  • Take out of the oven a let cool. Once cooled some, eat that cookie.
