Low Carb Chicken Alfredo Soup

Ingredients

  • 2 Lb Boneless, skinless Chicken breasts or thighs, cubed in bite sized pieces.
  • 4 C Chicken Broth
  • 3/4 C Heavy Cream
  • 1 C Dry White Wine, optional
  • 1 T Minced Garlic
  • 3-6 C Torn Spinach Add as mush as you want to add
  • 1 Can Italian Diced Tomatoes Drained if there is a lot of liquid
  • 1 C Dreamfields pasta, I used elbow noodles
  • 1 C Parmesan Cheese
  • 12 oz Frozen Cauliflower
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1 t Italian Seasoning
  • Red Pepper Flakes for topping, optional

Instructions

  • Place your cut up chicken in the bottom of your crockpot.
  • Add broth, heavy cream, and dry wine (if using). Add tomatoes, minced garlic, salt, pepper, and Italian seasoning.
  • Stir to combine. Add cauliflower.
  • Cover and cook on low 4-5 hours.
  • Remove cauliflower with a slotted spoon and place in a blender. Add a little of the broth to the blender. Bled until the cauliflower is completely broken down.
  • Stir the cauliflower mixture back into the crockpot. Add the pasta and spinach. Stir and cook until the spinach and pasta are done to your liking.
  • Serve hot with parmesan cheese and red pepper flakes, if desired..
