Preheat oven to 400 degrees. Line baking sheets with parchment paper, if desired.
In a flat dish mix the dry ingredients.
Add your beaten eggs to a small dish. Get everything ready for assembly.
Dip each pork chop in the eggs on both sides.
Then dip each side in the pork rind mixture.
Place on the prepared baking sheet. When all pork chops are prepared, place in the oven.
Depending on the thickness of your pork chops, your baking time might vary. I baked mine for about 25 minutes. You want them to reach at least 150 degrees.
Allow to rest for about 5 minutes and then serve.
