Crockpot Roast Tacos

Ingredients

  • 2 Lb Beef Roast
  • 2-4 Adobe Peppers
  • 1-2 T Sauce from the can of peppers
  • 1 T Cumin
  • 1/2 T Chili Powder
  • 2 T Minced Garlic
  • 2 t Dried Oregano
  • 1 C Beef Broth
  • 1 1/2 t Salt
  • 1 t Black Pepper
  • 4 Dried Bay Leaves, optional
  • 1 M-L Onion, chopped

Instructions

  • Place roast in crockpot. In a measuring cup pour the broth and everything else. Mix and pour on top of the roast. I used a 2 cup measuring cup.
  • Place lid on top and cook on low 6-10 hours or high 4-6 hours. Remove the roast and let it cool slightly.
  • If desired blend up your sauce.
  • Add sauce to the meat, as much as desired.
  • Serve in tacos, burritos, chimichangas, salads, enchiladas, and more!!
