Dice up your chicken into smallish squarish chunks.
Add your oil to a large skillet (I used red palm oil) over medium heat.
Add your chicken to the skillet.
Add your seasonings to the chicken. Stir and cook.
Stir and cook.
When just about cooked through, remove from the skillet. Add your heavy to the skillet and green chilies.
Stir. Add your shredded cheese.
Stir and add the chicken back to the skillet.
Stir and taste. Add more seasonings that you think it might need.
If you are serving this over a base, place your base in a bowl.
Top with the chicken and cheese sauce and any other toppings desired.
