Polllo Con Queso

Ingredients

  • 1 1/2 - 2 Lbs Boneless, Skinless Chicken Breasts or Thighs
  • 2 Tb Olive Oil or other fat You might need more
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 t Chili Powder
  • 1 t Ground Cumin
  • 1/2 t Salt Taste the final dish and see if you need more salt
  • 1/2 t Black Pepper
  • 1/2 t Mexican Oregano I found mine in the seasoning section with the Mexican ingredients
  • 4 oz Can of Green Chilies
  • 2 oz Cream Cheese I used reduced fat
  • 2 C Shredded Cheese Use any varity that your family likes
  • 1/2 C Heavy Cream You want it to be very queso like. You can start with 1/2 cup and add as more if you tghinks it needs more.

Instructions

  • Dice up your chicken into smallish squarish chunks.
  • Add your oil to a large skillet (I used red palm oil) over medium heat.
  • Add your chicken to the skillet.
  • Add your seasonings to the chicken. Stir and cook.
  • Stir and cook.
  • When just about cooked through, remove from the skillet. Add your heavy to the skillet and green chilies.
  • Stir. Add your shredded cheese.
  • Stir and add the chicken back to the skillet.
  • Stir and taste. Add more seasonings that you think it might need.
  • If you are serving this over a base, place your base in a bowl.
  • Top with the chicken and cheese sauce and any other toppings desired.
