Taco Tuesday Casserole, Low Carb Trim Healthy Mama S

This recipe will replace your off plan, carb filled taco nights with the perfect low carb replacement. It truly is delicious. My family cleaned the bowl! A couple of my kids stuffed theirs into tortillas but the rest of us filled our bowls with the meat mixture and topped it with shredded cheese, lettuce, sour cream, green onions, black olives and salsa. Perfection!!

This recipe is fast to put together, especially if you start with precooked taco meat. If your meat is fatty, you will need to rinse it. Too much fat will cause this dish to take a while to set up and it will be greasy. Top with your favorite toppings. I love avocado or guacamole, but my avocado wasn’t ripe yet This was still delicious without it. Remake your taco Tuesday with a healthy replacement that your family will love!!

This is an amazing trim healthy mama s recipe. I love taco Tuesday, taco Wednesday, taco Thursday, etc. I mean, I just love everything taco!! Finding trim healthy mama recipes that replace my old, off plan dinners, is something I love. This recipe did everything I needed it to.

Taco Tuesday Casserole

Ingredients

  • 2 Lb Ground Beef
  • 10 oz Package Cauliflower Rice, steamed
  • 1 Med Bell Pepper, diced
  • 1 Lrg Onion, diced
  • 3 Md/Lg Eggs
  • 2 C Shredded Cheddar Cheese
  • 4 oz 1/3 Less Fat Cream Cheese, softened
  • 1/4 C Heavy Cream
  • 2 Serv DIY Taco Seasoning

Toppings: Lettuce, Salsa, Black Olives, Green Onions, Diced Avocado, Chopped Cilantro, Salsa, Sour Cream

    Instructions

    • In a large skillet start browning your meat. Add in the cauliflower rice, onion and bell pepper.
    • After the meat is cooked through, drain your meat if necessary. Add your taco seasoning and cook though.
    • Place your softened cream cheese in a bowl and smoosh around Add the heavy cream a little at at time. If you add it too fast, it will be hard to get it to mix properly.
    • Beat each egg, one at a time. Add them individually to the cream cheese mix and stir to combine. Add all 3 eggs.
    • Add 1 C shredded cheese to the cream cheese mixture and stir. Then add the cream cheese mixture to the hamburger meat and stir to combine.
    • Place mixture into a 9X13 pan. Bake at 350 degrees for 30-40 minutes, until the middle is set.
    • Scoop into bowls and serve with desired toppings.
