Yes, cottage cheese is having it’s moment. This blended cottage cheese taco bowl was delicious. You don’t need a recipe, but I will share what I did and how I kept it low in calories but high in protein. First, I honestly couldn’t believe how much I loved this! It was so good. I don’t want to hype it up too much, but if you like tacos, make this!
If you have blended cottage cheese in your fridge, you can make so many things.
This blended cottage cheese taco bowl is one of them. Here is how I kept it low in fat and calories. I used lean ground beef. I used about 1/2 cup of lowfat cottage cheese. The only other things I added were veggies. Build this taco bowl as big as you want. Add shredded cheese, avocados, full fat meat, etc. This is just a guide, a jumping off point. But let me tell you again, so stinking good!!
A couple thoughts and then on to the recipe.
I have been going through so much blended cottage cheese, now I buy the big container and blend straight in the container with my immersion blender. Easy and no need to go back and forth with the cottage cheese. Another option over plain blended cottage cheese is using my blended cottage cheese nacho cheese sauce. I plan on trying that soon. You could also make a batch of burrito bowl meat mixture as part of your meal prep. That is also low fat and low calorie and full of veggies. However you make it, I would love to hear what you thought.

Ingredients
- 1/3-1/2 C Blended Cottage Cheese
- 1/4-1/2 C Taco Meat
Anything You want to Add: Salsa, Lettuce, Diced Tomatoes, Cilantro, Diced Onions, Jalapenos, Cheese, Avocado, Guacamole, etc.
Instructions
- Place the desired amount of cottage cheese.
- Add taco meat.
- Top with desired toppings.
- Stir, it won't be beautiful but it is delicious.
