Low Carb Sausage and Shrimp Cajun Skillet
This is such a flavorful and family friendly recipe. My family absolutely loves this. Shrimp is a family favorite but it is a little on the expensive side. Adding all of these vegetables not only adds to the bulk of the recipe and makes this so healthy.
I usually prep this one ahead. I chop of most of the veggies and sausage. It makes dinner come together in about 15-20 minutes. No need for a drive thru on a busy night. I love providing food that my family really loves and saves us money.
Make this as spicy as your family likes. I add a little Cajun seasoning to the skillet and then those that like more heat can sprinkle more on their individual servings. If you don’t eat shrimp or want to save a little money, buy two packages of sausage. If you are eating this in the trim healthy mama S setting, or low carb, check the carb count on your sausage package. And as always, add more or less spice/seasonings for your family’s tastes.
Low Carb Sausage and Shrimp Cajun Skillet
Ingredients
- 1 12-16 oz Package of Sausage
- 1 12 oz Package of Frozen Shrimp- Deveined Shelled, and Thawed
- 1 Bunch of Asparagus woody ends removed, Cut into Thirds
- 2-3 Yellow Squash Sliced
- 1-2 Zucchini Sliced
- 1 Can Fire Roasted Tomatoes
- 1 Medium to Large Onion Diced
- 1-2 t Minced Garlic
- 1 t Salt
- 1/2 t Black Pepper
- 1/4-2 t Cajun Seasoning
- 1/2-1 T Olive Oil
Instructions
- Drizzle Olive oil into a large skillet over medium heat. Add diced onion and cook for about 5 minutes, until onion has softened. Add garlic and cook another 2 minutes.
- Turn the heat up to medium high and add the veggies, the sausage and the canned tomatoes. Cook until veggies are soft. Add in seasonings and stir.
- Add thawed shrimp to the skillet and cook just until the shrimp turns pink, about 2 to 4 minutes.
- Serve in bowls with extra seasoning, as desired.
