Ingredients
- 1 –1½ lbs lean ground turkey
- 1 medium onion diced
- 1 bell pepper diced
- 2 –3 cloves garlic minced
- 1 large sweet potato peeled and cubed
- 1 can black beans drained and rinsed
- 1 can diced tomatoes
- 1 can tomato sauce
- Optional: 1 can Rotel or diced green chiles
- 1 –2 cups chicken broth adjust for desired thickness
- ### Seasonings
- 2 –3 Tbsp chili powder to taste
- 1 –2 tsp cumin
- 1 tsp smoked paprika
- 1 tsp oregano
- Salt and black pepper to taste
Instructions
- Dice up your veggies.

- Add sweet potato, black beans, tomatoes, tomato sauce, Rotel (if using), broth, and seasonings.

- Cook the turkey, veggies, and add seasonings.

- Add turkey to crockpot. Stir. Cook on low for 6-8 hours or high 3-5 hours.

- Taste and adjust seasonings before serving.

- Serve as desired. I added a little guacamole and a wedge of light laughing cow cheese to mine.
