Papaya Chicken, Trim Healthy Mama E

Trying to find trim healthy mama e recipes that my family likes is a bit of a challenge. Most of the time they end up with crossovers. This recipes was a hit with 4 out of 5. I call that a win.

When you pick your papaya you want it more yellow than green. Here is what mine looked like when I bought mine. It could have been a little moore yellow than it was, but it was really close to perfect. You need 4 cups of chopped papaya for this recipe. You have 2 options: find a small one that will make 4 cups or buy a bigger one and use your leftovers for snacks, smoothies or even make 2 of these and freeze one.

I don’t add much salt to the recipe as written. Because of the soy sauce/Bragg’s added, you might want more to your individual bowls.

This recipe was part of my freezer recipe meal day. I didn’t include that many e meals, but I am trying to grow the list of e meals my family likes. Also, depending on the sweetness of your papaya, you might want more of the brown sugar substitute. I used 3 T and it was sweet enough for us. This is the sweetener that I used.

Papaya Chicken, THM E

Ingredients

  • 1 Ripe Papaya
  • 1 1/2 LB Chicken Breasts
  • 3 T Brown Sugar Substitute
  • 2 T Braggs Liquid Aminos, or soy sauce
  • 1/2 t Salt
  • 1/2 t Black Pepper
  • 1 in Chunk of Ginger my ginger was thin so I used 1 1/2 inch piece
  • 3 C Cooked Brown Rice
  • 1 tsp Sesame seeds, optional

Instructions

  • Cut papaya in half
  • Scoop out the seeds
  • Peel and cut the papaya into chunks. Place 1 cup of the papaya into a blender.
  • Add salt, pepper, ginger, sweetener, Bragg's and 1/4- 1/2 cup of water to the blender and blend. You dont want soup but you dont want this too thick.
  • If you are freezing this, place the blender mixture, 3 C of cubed papaya, and the chicken breasts into a labeled freezer baggie. Store in the freezer until the day before you want to eat it. Thaw and follow the directions below.
  • Place the chicken, blender mixture and 3 cups of cubed papaya, or the contents of the baggie to a parchment lined baking sheet.
  • Bake in a 350 degree preheated oven for 20-30 minutes, until cooked through. Take out of the oven and shred chicken.
  • Serve on top of the cooked and hot brown rice. Sprinkle withthe optional sesame seeds. Add more salt or Braggs as needed.
