Comforting Chicken Cordon Bleu Casserole- LC and THM S

Ingredients

  • 1 1/2-2 Lb Boneless, Skinless Chicken, cooked
  • 6-8 Slices of ham, chopped Or use leftover ham
  • 1 T Lemon Juice
  • 1 T Dijon Mustard, or use what you have
  • 8 oz Cream Cheese, softened I used 1/3 Less fat
  • 3/4 t Salt
  • 1/2 t Pepper
  • 1 t Garlic Powder
  • 4 oz Butter
  • 8 Slices of Swiss Cheese- use how many you need to cover the top or use shredded Swiss

Instructions

  • In a microwave safe bowl place butter and cream cheese. Microwave for about 20-30 seconds. You want the butter mostly melted to make spreading on top easier.
  • Take the bowl out of the microwave and add the seasoning, lemon juice, and mustard. Mix.
  • In a 9x13 or similar pan, place chopped chicken.
  • Top the chicken with the ham.
  • Spread the cream cheese mixture on top of the ham.
  • Top with your Swiss cheese. You can use shredded if you have it. I had sliced. I broke pieces to cover the whole pan.
  • Bake at 350 degrees for 20-25 minutes, or until hot and bubbly but not too dark.
  • I topped with dried parsley because it looked so bland.
  • Serve with veggies. I served with a salad and frozen roasted veggies from Costco.
