Cook pasta and drain.
Add your sauce ingredients to a blender, I used a generic version of a bullet.
Blend until smooth.
I added 1/4 of a cup of additional unsweetened almond milk to get the rest of the sauce out of the blender cup. It didn't really do much.
I had the chicken and spinach in my saucepan heating up. And then added the sauce. I cooked the sauce until it was warm/hot, but not boiling.
Once heated, remove from heat.
Pour over your pasta. Top with any toppings desired.
