Bananas Foster Overnight Oats

Ingredients

  • 1 1/2 C Milk of Choice- I use some fairlife and unsweetened almond
  • 1 C Oats
  • 1 C Nonfat Greek Yogurt
  • 3 T Chia Seeds
  • 3 Scoops Protein Powder of Choice If you are using unsweetened you will need to add more than suggested
  • 1-2 Large Ripe Bananas
  • Extra bananas if adding to the overnight oats mix
  • 1 t Vanilla
  • 1/2 t Cinnamon Feel free to add more
  • 1/4 t Nutmeg
  • 2 T Brown Swerve
  • 4 T Chopped Walnuts

Instructions

  • In a blender add the milk, yogurt, chia seeds, and oats. Blend a little. Add the vanilla, nutmeg, cinnamon, and protein powder. Taste. Add extra sweetener if needed.
  • Pour the mixture into 4 different containers. If desired, stir in chopped bananas. Sprinkle with a little nutmeg and/or cinnamon if desired.
  • In a skillet put the brown swerve. When it's melted add the sliced bananas. Cook for a few minutes and flip. Be careful so they don't break.
  • When your bananas look like this, remove from the heat.
  • Carefully pour the liquid from the skillet into the 4 containers.
  • Carefully divide the cooked bananas on top of the containers. If using, add 1 tablespoon of the walnuts next to the bananas.
  • Store in the fridge. Top with spray whipped cream if desired.
