This part is optional, I wanted my veggies cooked a bit before adding the remaining ingredients. In a pot, add about 2 teaspoons of olive oil and cook your onion, carrots, and celery on medium heat until softened.
Once softened, add your seasonings. Remember, you can sub a ranch packet it you want/need to.
Place everything in your crockpot and cook on low for 4-6 hours, or high2-3 hours.
Carefully remove your chicken and cut or shred.
Place back into the pot.
Stir and taste to make sure it is seasoned to your tastes.
Serve with desired toppings.
