Cheesy Bacon Ranch Chicken Hashbrown Casserole

Ingredients

  • 1 1/2 Lb Chicken Breasts, cut into pieces Could skip this and use rotisserie chicken instead
  • 1 M Onion, diced
  • 1 T Minced Garlic
  • 20 oz Bag Hashbrowns, I used Simply potatoes
  • 2.5 oz Bag of Real Bacon
  • 2 C Shredded Cheese, can use reduced fat or fat free
  • 1 C Cottage Cheese
  • 1 C Sour Cream
  • 1 Pckg Ranch seasoning, can use homemade
  • 1 T Olive oil
  • 1-3 T Nutritional yeast, optional

Seasonings: Salt, pepper, garlic powder, onion powder, smoke paprika

Instructions

  • Season the chicken with the seasonings listed. If desired add some of the ranch too. In a large skillet add the oil and seasoned chicken. Cook over medium heat until almost cooked.
  • Add the onion. Cook for a few minutes and then add the minced garlic.
  • Add the sour cream and cottage cheese (I used unblended this time, but blended would be fine too). Add the ranch seasoning. Stir. This is the bacon I used. Add the whole package.
  • Add the bacon and stir. I added the cheese somewhere around here.
  • Add the nutritional yeast if desired. Stir.
  • Finally add the potatoes.
  • Pour into a 9x13 dish.
  • If desired sprinkle with parsley or some ranch seasoning.
  • Bake at 375 degrees for 15-25 minutes, until bubbly.
  • Serve as desired.
