In a large skillet over medium heat, add your olive oil and diced onion. Cook for a few minutes, add salt, pepper, and garlic. Cook for a minute. While you are cooking this, microwave your cauliflower rice.
Add your cauliflower rice to the onion mixture.
Cook the rice and keep adding about 1/4-1/2 cup of liquid. Keep cooking and adding until your rice is soft and no longer tastes like cauliflower. Microwave your broccoli. Add it to the skillet. Break apart the florets so they are smaller.
Once the broccoli is mixed in stir in heavy cream and 1 1/2 cups of shredded cheese.
Place rice mixture into a sprayed 9x13 dish.
Top with remaining cheese. Since this is already hot, we will only cook for about 10-15 minutes. Bake at 350 degrees until cheese is melted.
Serve hot with desired sides.
