Crockpot Chicken Alfredo- LC and THM S

Ingredients

  • 1 1/2 Lb Boneless, skinless Chicken (I used breasts)
  • 1/2 C Broth
  • 8 oz Cream Cheese, can use 1/3 less fat
  • 1 1/2 C Heavy Cream
  • 4 T Butter
  • 3/4 t Salt
  • 1/2 t Pepper
  • 1 t Garlic Powder
  • 1 t Italian Seasoning
  • 1/2 C Parmesan Cheese, shredded
  • 1/2 C Shredded Mozzarella, optional
  • 1-2 Pkg Frozen Veggies, optional

Instructions

  • In your crockpot place the chicken, chicken broth, cream cheese, heavy cream and butter.
  • Allow to cook on high 3-4 hours or low 6. Stir occasionally, if you can.
  • Remove chicken from crockpot. Add veggies if desired. I using veggies that are chunky, make sure you break them up. Cook pasta a little less than al dente.
  • Shred or dice up cooked chicken.
  • Add cooked pasta. Stir.
  • Add shredded mozzarella and stir, if desired. Sprinkle the top with shredded parmesan. (I don't have a picture since I was videoing this part). Allow to melt and then serve. You can top with red pepper flakes, Italian seasoning, or parsley, if desired.
