Cover the chicken with the salt, pepper, and Italian Seasoning. Pour the sun-dried tomatoes and the minced garlic on top.
Pour chicken broth on top. Cube the cream cheese and place on top of the chicken.
Cook on low for 5-6 hours or on high 3ish hours. I took out the biggest chicken breast and cut it in half to make sure it was done. If you use chicken thighs, I would check their doneness a earlier than the time suggested.
Take chicken out and let it cool a little bit. If you wanted to thicken it, now is the time.
Slice, cube, or shred your chicken.
Stir the sauce. Add the heavy cream and additional chicken broth if desired. Add the chicken back to the sauce. Taste it and add more seasoning if you think it needs it. I added some red pepper flakes to ours.
Serve with the sauce however you want.
