Mix the seasonings together and coat the pork roast.
Place a medium to large skillet over medium heat. Add your oil. Carefully place your roast on the skillet.
Brown the roast on all sides. Carefully remove the roast and place into your crockpot.
Add your diced onion into the hot skillet and cook for about 3-4 minutes. Add the minced garlic and cook for another 2 minutes.
Add the broth and cook for about a minute.
Pour the onion-broth mixture over the roast. Cook for 6-8 hours on low or 4 on high.
When the time us up, remove the roast from the crockpot.
Add the desired amount of heavy cream to the crockpot.
Whisk in the xanthan gum. Don't add too much, it will take a couple minutes to thicken.
After the roast has rested for a few minutes, slice.
Serve with the sauce on top.
