Char the poblano directly over a gas flame, under the broiler, in an air fryer, or in a dry skillet until the skin is blistered and blackened in spots. Place it in a bowl and cover for about 5–10 minutes. Rub or peel away most of the loose charred skin, remove the stem and seeds, and dice the pepper
Add the chicken breasts to the bottom of the slow cooker. Add the diced onion, charred poblano, garlic, green chiles, beans, chicken broth, cumin, chili powder, smoked paprika, oregano, garlic powder, onion powder, salt, black pepper, and cayenne if using. Cover and cook on **LOW for 6–7 hours** or **HIGH for 3–4 hours**, until the chicken is tender and easily shreds.
Remove the chicken and dice them or shred it with two forks.
Before returning the chicken to the crockpot, scoop out about **3/4 to 1 cup of the beans along with a little of the broth**. Mash them well with a fork or blend briefly until mostly smooth. This is optional
Stir the mashed beans back into the chili. This gives it a thicker, creamier texture without needing a lot of added fat. Add the **Light Laughing Cow wedges** and stir. It will take a little for them to melt. I mashed the bits on the side of the crockpot to kind of help them melt into the chili.
Return the shredded chicken to the slow cooker. Pour in the **1/4-1/2 cup half-and-half** and stir well. Cover and cook another **10–15 minutes on LOW**, just until everything is hot and creamy.
Stir in the lime juice and fresh cilantro right before serving. Taste and adjust salt, pepper, or lime as needed.
Taste and adjust salt, pepper, or lime as needed. Top as desired.
