Easy Cuban Black Beans

Ingredients

  • 14 oz Can of black beans, rinsed
  • 1/4 C Diced Bell Pepper
  • 1/4 C Diced Onion
  • 2 t Minced Garlic
  • 1/4 t Dried Oregano
  • 1/2 t Cumin
  • 1 t Orange zest
  • Juice of a lime, optional
  • Salt and pepper to taste
  • Broth or water as needed while cooking
  • 1-2 Dried bay leaves, optional

Instructions

  • Add your chopped onion, bell pepper, and garlic to a saucepan. I did add a little oil to start cooking.
  • Once they have cooked for a few minutes, add the seasonings. Allow them to cook for a minute.
  • Add the beans and some liquid. Allow to simmer for about 10 minutes. I would add 1/2 cup of broth to start. You don't want soupy beans, but you want them to cook and not burn. I did add optional bay leaves.
  • Once they have simmered, remove the bay leaves and add the cilantro, lime juice and orange zest, if using. Taste and add anything you think it might need.
  • Serve as desired.
