I try to keep things simple. In the bowl you are going to be mixing the marshmallows in, add your 1/3 cup of water and 2 tablespoons of gelatin.
In a saucepan bring water and sweetener to a simmer. If using allulose, don't put on high heat.
Once simmering, add the salt and vanilla.
Carefully, in a small stream, with the mixer on low or medium low, pour the sweetener mixture over the gelatin.
Once the sweetener mixture is all in the bowl, scrape the bottom of the bowl to make sure you don't have any of the gelatin that isn't dissolved.
Now is the fun part, increase the speed on your mixer. Allow everything to mix and thicken. Once you don't have to worry about the mixture to splash everywhere (it isn't too liquidy), turn it on high. Once the mixture has grown in size and becomes thick like marshmallows, place into parchment lined pan.
Smooth out the best you can and let sit for 24 hours.
Pick up the parchment paper to remove the marshmallows. Peel the marshmallow mixture off the parchment paper. What I did was run my finger down the edge and the marshmallow stuck to itself. It was really easy. Now cut them however you want. I used a pizza cutter I had ran under hot water.
I coated them in powdered swerve.
Top your hot chocolate with healthy, homemade marshmallows.
