Ingredients

Apple Pie Filling

  • 2 medium apples peeled and diced small
  • 2–3 tablespoons brown Swerve or sweetener of choice, to taste
  • 2 tablespoons water
  • 1 teaspoon butter
  • 1 teaspoon apple pie spice
  • salt Pinch
  • ½ teaspoon vanilla extract optional

Creamy Protein Overnight Oats Base

  • 1 cup old-fashioned oats
  • cups unsweetened almond milk or milk of choice
  • 1 cup nonfat Greek yogurt
  • 3 tablespoons chia seeds
  • 3 scoops vanilla protein powder
  • 1 teaspoon vanilla extract
  • ½–¾ teaspoon apple pie spice
  • salt Pinch
  • sweetener to taste

Instructions

Apple Pie Filling

  • Add diced apples, brown Swerve, water, butter, apple pie spice, and salt to a microwave-safe bowl.
  • Microwave for 2–3 minutes, stir, and continue microwaving in short intervals until the apples are softened and the mixture becomes syrupy.
  • Remove from the microwave and stir in the optional vanilla extract.
  • Allow the apple pie filling to cool completely before adding it to the overnight oats.

Creamy Protein Overnight Oats Base

  • Add the oats, milk, Greek yogurt, chia seeds, protein powder, vanilla extract, apple pie spice, salt, and sweetener to a blender.
  • Blend until smooth and creamy.
  • Divide the oat mixture into 4 containers.
  • Spoon the cooled apple pie filling into each container. You can stir it in completely or layer it for an apple pie swirl.
  • Refrigerate overnight or at least 4 hours.

Notes

Optional Apple Pie Toppings

  • A sprinkle of granola for a ‘pie crust’ crunch
  • Chopped pecans or walnuts
  • Crushed on-plan cereal for extra crunch
  • Extra diced apples sprinkled with apple pie spice
  • Sugar-free caramel drizzle for a more dessert-like option

  • Dice the apples small so they soften quickly and you get apple flavor in every bite.
  • Let the apple filling cool completely before adding it to the oats.
