High Protein Chunky Monkey Overnight Oats

Ingredients

Overnight Oats Base

  • 1 cup old-fashioned rolled oats
  • 1 ½ cups unsweetened almond milk or milk of choice
  • 1 cup nonfat Greek yogurt
  • 3 scoops vanilla protein powder
  • 3 Tbsp chia seeds
  • 3 Tbsp peanut powder PB2-style, more if you want more pb flavor
  • 2 Tbsp natural peanut butter
  • 1 tsp vanilla extract
  • Sweetener to taste if needed, depending on protein powder
  • Pinch of salt

Chunky Monkey Add-Ins

  • 1 medium ripe banana mashed
  • ¼ cup sugar-free chocolate chips or chopped sugar-free chocolate Use more or less, depending on tastes

Optional Toppings (for serving/photos)

  • Banana slices
  • 1 T Chopped peanuts more or less, depends on your tastes and nutritional needs
  • Peanut butter drizzle I used about 2 tablespoons melted for all 4 jars
  • Sugar-free chocolate drizzle
  • Sprinkle of cinnamon

Instructions

  • In a blender, combine oats, almond milk, Greek yogurt, protein powder, chia seeds, peanut powder, peanut butter, vanilla, sweetener, and salt. Blend until fully combined.
  • Fold in the mashed banana and chocolate chips.
  • Divide mixture between 4 jars or containers.
  • Cover and refrigerate overnight (or at least 4 hours) to allow the oats and chia seeds to soften.
  • Before serving, top with banana slices, chopped peanuts, and a drizzle of peanut butter and chocolate if desired.

Notes

* For the best texture, add fresh banana slices right before eating rather than storing them mixed in.
* If meal prepping all 4 servings at once, the mashed banana mixed into the base should hold well for several days, but topping each serving fresh gives the best appearance.
* Toasting the chopped peanuts first adds even more “Chunky Monkey” flavor.
